Could I start a nonprofit restaurant, trucking business, etc., to ...

Would it be possible for me to start a nonprofit corporation for any service or industry, so that instead of worrying about my company?s profits, I can pay my employees more and keep costs down for my customers?

Just keep reducing prices and paying out profits to employees until you earn no money. Being a formally recognized non-profit requires special paperwork and documentation.

The only reason I see for being a non-profit is that as a for-profit business no one in their right mind would finance the start-up operations. So I guess as a non-profit you could ask donations to fund your business. However, it would seem to be a bit inefficient to donate money to be re-invested only to be redistributed. Why not avoid the business and slippage of that and just redistribute the funds directly?
